2 (1-pound, 1-ounce) cans sweet potatoes or yams
⅔ cup sugar
⅓ cup butter
¼ cup Jack Daniels whiskey or bourbon
1 teaspoon salt
½ teaspoon vanilla
1½ cups miniature marshmallows
Turn potatoes into heavy saucepan, cover and cook over moderate heat for 10 to 15 minutes, stirring often. Combine potatoes and the next five ingredients in a large mixer bowl and beat until smooth. Turn into a buttered 1½ quart casserole and arrange marshmallows over the top. Bake in a moderate oven (350 degrees) for 25 to 30 minutes, or until potatoes are hot and marshmallows are evenly browned.
