2 cups zucchini – shredded. You can also use ½ zucchini and ½ yellow squash
2 ounces cream cheese cut into small cubes
¼ cup shredded cheddar cheese
¼ cup heavy cream
2 tablespoons butter
Salt and pepper
Melt butter in 10-inch frying or sauté pan. Toss in the zucchini and sauté for one minute. Add cream cheese and heavy cream. Stir until cheese is melted.
Salt and pepper to taste. Sprinkle cheddar cheese on top just before serving.
